The Culinary Institute of America is the world’s premier culinary institute in Hyde Park, NY.  Enjoy a day out of the city with other members of the group as we dine at Bocuse French Restaurant for lunch, walk off the calories on a tour of the FDR Mansion and Presidential Library.  COVID-19 guidelines for the campus will be observed (see below). Our group will be in the private dining room at the restaurant.

How it works:

  • Take the 9:45am Metro-North train from Grand Central or points north to Poughkeepsie, NY (65 miles north of NYC). You may also drive to meet the group at the train station.
  • Your guide will pick you up and bring you to the CIA campus overlooking the Hudson River.
  • Enjoy lunch at Bocuse and a limited tour of the campus.
  • After lunch we will have a tour of the FDR Mansion and Presidential Library.
  • Following the tour, we’ll head back to the train.

Cost:  $165 General admission ($155 lifetime VIP members) includes 3 course lunch, 1 soft drink or cocktail, the FDR Tour, transportation to and from the train station to all activities.  (Space is limited to 8)

Not included: Train fare, items purchased outside of our package.

Can I come alone? Yes, most guests do! It’s a great way to meet new people.

Do I need a ticket? We will have your name on our list.  No need for a ticket.

Dress Code:   There is no dress code for the restaurant.  Be comfortable and casual.  Wear sneakers or comfortable shoes.

First Course

  • Black Truffle Soup V.G.E.

  • Roasted Squash Soup

  • Sunchoke and Parsnip Velouté

  • New Zealand King Salmon Crudo*

    pickled caulilini, orange blossom, yuzu

  • Charred Octopus

    roasted peppers, piquillo purée, chorizo

  • Pate Maison*

    celery root remoulade, apricot preserve

  • Vegetable Ash Cavatelli

    goat cheese, cauliflower, honeycrisp, parsnip almond crème

  • Ricotta and Crab Ravioli

Second Course

  • Arctic Char*

  • Dover Sole

    vadouvan, cauliflower, shishito, bok choy, tangerine-brown butter

  • Braised Leg of Rabbit

    fall vegetables, saffron rice, pine nuts, natural jus

  • Pork Tenderloin and Belly*

    quince butter, heirloom apples, brussels sprouts, mustard jus

  • Braised Beef Short Rib

    rutabaga sauerkraut, parsnip purée, dijon spaetzle, natural jus

  • Breast of Duck*

    orange scented couscous, b’stilla, carrot purée, spinach, grains of paradise

  • Acquerello Risotto Forestier

    potato, foraged mushrooms, spinach

Third Course

  • Gâteau au Chocolat

warm chocolate cake, four spice orange sauce, vanilla bean ice cream

  • Récolte d’Automne

    green apple tart, shiso sauce, cinnamon squash harvest, toasted hazelnut fritter

COVID-19 Protocols

In accordance with current city and state protocols vaccination status is not mandatory for this event.  However, we do ask that participants act in a responsible manner and do not attend if feeling ill, showing symptoms or have been recently exposed.  Mask wearing is optional unless the venue or city has mandated that.  Everyone should respect the comfort levels of others as we transition into this next phase of socializing in the Covid era.
This event is nonrefundable.  If you have tested positive for Covid and cannot attend, we will do our best to provide you with credits to select future events with a copy of your positive test results. Please note that due to the cost involved in some activities credits may not be used for the event you missed.
